(HT photo) On August 5, last year, flash floods in Kheer Ganga led to widespread damage in Dharali village. Only two bodies were recovered following the Dharali disaster, while 67 others, including 25 Nepali citizens, remain missing. “We have already made the channel. The rest of the work will be carried out in phases. We have drafted a detailed plan for the river including bunds on both sides which has been sent to the Centre for approval,” said Sachin Kumar Singhal, Executive Engineer, Irrigation Department, Uttarkashi. Activists and experts have raised concerns that engineered channels may fail during extreme hydrometeorological events (such as floods), causing greater damage than natural channels. “It is understood that the government has initiated efforts to redirect the Kheer Ganga back to its pre-August 5, 2025 course by constructing …

A Soulful Rice and Sugarcane Kheer

A Soulful Rice and Sugarcane Kheer

Sugarcane and rice is slow-cooked for hours over a wood fire to create a little-known, soulful dessert called rasawal. As these unique recipes slowly disappear from her North Indian Muslim Syed family, Laraib Fatima Warsi embarks on a journey to preserve, document and revive them. Find her other recipes, here, and here. Chilly winter mornings in my ancestral home often have my mother and Razia Baji, our family helper, stirring sugarcane juice and rice in a large pot. I was given the onerous responsibility of chopping cashews, pistachios, almonds and raisins to be added to the dessert.   Made with sugarcane, rice, dry fruits and khoya, rasawal is not a very well-known dessert. Making it is laborious — it cooks slowly over a firewood for upto 6 hours. I remember waiting for it impatiently as it was ladled out to us in large bowls, after being left to cook all night. For me, rasawal is something that strengthens a feeling of community. Whenever it was cooked at home, it was always shared with friends and neighbours.  Even …

Recipe for Makhana Kheer from Mithila

RECIPE FOR MAKHANA KHEER (Make 4 bowls) Ingredients 1 litre milk¼ cup sugar 2 cups makhanaCashew nuts, almonds, raisins as per preference2 pods cardamom MethodBoil the milk, then bring it to a simmer until it becomes thick and creamy. My mother’s rule is that the milk should reduce by half before the next step.Heat another wok on the flame, and roast the makhana. Stor occasionally to prevent burning. The white makhana will slowly turn golden. Once it is crunchy, remove from the heat. Crush the makhana with a mortar and pestle. Avoid grinding it in mixer grinder as it becomes too powdery. Now, add sugar and cardamom pods to the milk. Stir well.Add the crushed makhana to the milk. Finish with roasted nuts.
