How to make kaju milkshake (Stepwise)

1. Rinse 12 to 15 cashews and 10 to 12 dried figs a couple of times in water.

Place them in a bowl and add enough hot water to cover them. Soak for for 30 to 45 minutes or until the figs soften well.

Drain all the water. Check a fig by pressing it gently. It should feel soft and easy to blend. If needed, soak for a little longer.

Tip: If making a plain cashew milkshake, skip the figs and use 20 to 25 cashews. Soak the cashews in hot water for 20 to 30 minutes before blending. To make it thicker, add 1 to 2 scoops of Ice Cream.

2. Transfer the soaked figs and cashews to a blender jar. If the figs are large, you can roughly chop them before blending.

3. Blend to a smooth puree. Coarse bits of figs are fine, if you want the chewy texture of figs. Or else just blend till fine and smooth.

4. Add the remaining 2 cups milk and blend again well.

Check the capacity of your blender jar before blending. Add the milk accordingly so that the ingredients blend easily without spilling.

If the jar is small, then mix the figs-cashews puree and the remaining milk in a bowl or pan with a wired whisk.

Tip: This recipe makes a slightly thick milkshake. If you prefer a thinner consistency, add more milk as needed.

5. Blend once more if using a blender. If mixing in a bowl or pan, whisk well with a wired whisk until evenly combined.

6. If the milkshake is not sweet enough for your taste, add 1 to 2 teaspoons of raw sugar or jaggery. Blend or mix again, then taste and adjust the sweetness as needed.

7. Pour kaju shake into serving glasses and serve immediately. You can garnish with a few chopped cashews or finely chopped figs if you like.
